One day I’m going to be driving down the road and some yahoo is going to cut me off in traffic (it’ll be on a day when I’ve pressed the coke button on the coke machine and a diet coke came out). He’ll slam on his brakes (because they always do) without realizing I’m wearing my fat jeans and have an AK47 in my purse.
I’ll get the death penalty…but not before a courtroom artist draws me with a double chin and a flat chest. And on my last night alive this is what I’ll eat…
Scalloped Potatoes Worth Dying For
1 tsp. butter
3 cups heavy cream
2 3/4 pounds Idaho Potatoes, peeled and cut into 1/4 inch slices
2 cups swiss cheese
Salt & Pepper
Preheat the oven to 400 degrees. Lightly grease a rectangular baking dish with the butter and set aside.
In a large saucepan, bring the cream to a simmer over medium heat. Add the salt and pepper (to taste–I go heavy on the pepper). Add the potatoes, adding more cream if necessary, until the potatoes are completely covered. Simmer until potatoes are fork tender (about 10-12 minutes).
Transfer 1/3 of the potatoes to the dish and top with 1/3 of the cheese. Continue layering–ending with cheese on top.
Place on a baking sheet (so you don’t make a mess of your oven) and bake until golden brown and bubbly (about 30 minutes).
